Description:The House of Chapoutier has a long and proud family tradition dating back to 1808. Today, seven generations later, Michel Chapoutier, the dynamic winemaker, carries on this tradition using biodynamic winemaking techniques to make outstanding wines which have received wide international acclaim. Michel Chapoutier is often daring combination of old and new techniques and his creative solutions to old problems has transformed winemaking in the region and brought many accolades to both himself and his wines, including much praise from the respected Mr Robert Parker. He has the biggest holding in Hermitage and is also the largest biodynamic producer in France. Chapoutier's commitment to biodynamism is unflinching. The earth (terroir) is a living organism and must be respected and reflected through flavours unique to each parcel and vintage rather than strive for a common style. The plots for the Domaine de Bila-Haut are located on the slopes of the high Agly Valley, in the Roussillon area of Southern France. They are composed of gneiss and schist from the Devonian Period.Harvest:The crop is hand-harvested.Winemaking:Entirely destemmed. The extraction is only performed by punching of the cap. Description:This appellation spreads over 11 communes within a triangle formed between the hills of Tain l’Hermitage, the Rhône River and the Isère River. It is, in volume, the most important cru of the Northern Rhône. The vineyards are situated on the plain below the surrounding hills where the soils are made up of granite and quaternary alluvial deposits left by the Isère River (clay and gravel). We select our wine yearly from amongst a small group of trusted wineries of the appellation with whom we have been working for many years.
Tasting Note:Colour – Dark with hints of deep purple.
Nose – Intense blackcurrant and violet aromas with spicy notes of white pepper, liquorice, vanilla, black olives and a hint of laurel leaves.
Palate – Harmonious and firm, suggestive of cherries and blackcurrant with long and well-defined tannins on the finish. The long and flavourful finale reveals black fruits notes.
Food Matches:Duck breast / Soft cheese / Ice cream
